Low FODMAP Recipe : Gluten-free cup cakes

Ingredients

150g dairy-free margarine,

150 g Caster Sugar

3 Eggs

½ tsp Vanilla Extract

150 g Gluten Free Self Raising Flour

1 tbsp Rice Milk

24 Paper Cake Cases

75 g Icing Sugar

1 tsp Lemon Juice

Method

Beat together the margarine & sugar until light and fluffy.

Beat in eggs and vanilla.

Beat in the gluten free flour and milk.

Spoon the mixture into paper cake cases standing on a baking tray.

Bake in a pre heated oven for 10/12 minutes.

To make the topping mix together the icing sugar and just enough lemon juice to make a stiff icing.

Spread the icing over top of the cakes.


What to watch out for

Baking powder can have wheat flour added, so make sure that you check the label.
