1 tbsp olive oil
1 tbsp garlic infused oil
½ tsp red wine vinegar
½ tsp caster sugar
150ml/4½fl oz passata
small bunch basil, chopped
125g/4oz gluten free gnocchi - click here for recipe
salt and freshly ground black pepper
Make the gnocchi , as directed by the recipe.
Heat the oil in a frying pan over a medium heat.
Add the vinegar and sugar and stir until the sugar has dissolved.
Add the passata, bring to the boil, then reduce the heat to simmer for 5-6 minutes.
Add the garlic infused oil, basil and season, to taste, with salt and freshly ground black pepper.
Add the gnocchi and stir well to coat.
To serve, place the gnocchi and sauce into a bowl and serve immediately.
