Method

Heat oven to 190C/170C fan/gas 5. Heat the olive oil/olivio in a pan, stir in the flour and cook for 2 mins.

Add the lactose free cream, then slowly add the spinach, stirring until smooth. Cook for 4-5 mins until the sauce thickens.

Stir in the cheddar,garlic oil, jalapeños, celery salt, paprika and chives.

Transfer to a baking dish and bake for 40 mins until golden.

Ingredients

3 tbsp olive oil or 50g olivio

2 tbsp gluten free flour

1 tbsp chopped chives

1 tbsp garlic infused oil

150g lactose free cream

500g chopped spinach

140g grated cheddar

1 tbsp red jalapeño pepper from a jar, drained and chopped

½ tsp celery salt

¼ tsp paprika
